Kaspar Schmauser stands for smart food with a system: plant-based, fresh and without compromise. The dishes are not only healthy, but are also freshly prepared on site every day. Only high-quality, natural ingredients are used, free from flavour enhancers and artificial flavours, colours or preservatives.

Guests can choose from over 50 ingredients, toppings and dressings or create their own favourite combination with ‘Build your Bowl’. The modern ordering system via digital terminals ensures short waiting times – while you make your selection, your order is freshly prepared with great care in the kitchen. Alternatively, Kaspar Schmauser offers the option of pre-ordering online and picking up your order at your desired time.

The seasonal selection is part of the sustainable concept: ingredients are adapted according to the season to guarantee freshness and avoid long transport routes. The menu ranges from salads, bowls and stews to breakfast dishes, homemade desserts, lemonades, iced teas and hot drinks.

Who is behind Kaspar Schmauser?

Kaspar Schmauser was founded by Philipp Selzle, Daniel Meyer and Claudius F. zur Linden. The trio shares a desire to make plant-based nutrition modern, suitable for everyday use and enjoyable, while actively contributing to a more conscious society.

Within the team, Philipp Selzle is considered the central point of contact on site: as the person responsible for operations and marketing, he is the ‘good soul’ for many employees – present, committed and always on equal terms.

The story of Kaspar Schmauser

The success story began in February 2021 at Nuremberg's main market square. In the midst of lockdown, Kaspar Schmauser initially started with a takeaway-only offering. It quickly became apparent that there was high demand for healthy, vegan cuisine, and the response was overwhelming.

What began with a small team and a big vision developed rapidly. There are now locations in Erlangen, Fürth, Leipzig, Berlin, Essen and Hamburg, with more already planned. The core remains unchanged: freshness, quality and a smart approach to plant-based nutrition.

In addition to his vegan-vegetarian approach, Kaspar Schmauser is also committed to local partnerships. Through collaborations with regional businesses, associations and start-ups, the range of products on offer is being expanded in a sustainable manner.

Location at the Christmas market

The location on Nuremberg's main market square creates a very special atmosphere during the Christmas season: Kaspar Schmauser is right in the heart of the Christkindlesmarkt – one of the most famous Christmas markets in the world. The colourful hustle and bustle can be observed from the open window front, while a warm, relaxed retreat awaits inside. Particularly popular: groups who stop by for mulled wine and enjoy the special atmosphere. The combination of a central location, an international crowd and a festive atmosphere makes this location unique.

Winter specials & highlights

During the cold season, Kaspar Schmauser offers a selection of seasonal drinks and dishes. The winter menu includes mulled wine, hot Aperol, vegan eggnog, hot lemonades, pumpkin spice latte and winter bowl.
